From: The Eat Clean Diet Cook Book

Memo: This is always a hit with guests, and it’s so easy to prepare!

Ingredients
  • 4 6oz salmon filets
  • 1 large bunch of green onions
  • Fresh Parsley
  • Fresh Chives
  • Rosemary
  • Thyme
  • 2 Lemons
  • Olive Oil
Instructions
  1. Preheat oven to 450 degrees.
  2. Spray a glass 9 x 12 pan with cooking spray.
  3. Lay the salmon skin side down in the pan.
  4. Brush lightly with olive oil.
  5. Squeeze the juice of one lemon over the salmon.
  6. Sprinkle with salt and pepper. Lay the green onions along the top.
  7. Bake 12 minutes at 450 degrees.
  8. While the salmon is cooking, chop the fresh parsley, chives, rosemary and thyme to equal ¼ cup.
  9. When salmon is finished cooking, remove the wilted green onions and throw them away.
  10. Sprinkle with the fresh herbs and serve warm.
  11. I usually serve this along with a wedge of fresh lemon although it is seldom needed.
